There he test-cooks, refines, elaborates his discoveries, turning them into “products”. Then he offers them to creative chefs. Star chefs are under enormous pressure to perform. They incessantly seek after the new ingenious taste, however do not have the time to travel. Mark’s discoveries give them an advantage in a tough competition. In the Mekong-delta he came across a unique fish sauce. In the jungle he found the Mak Dum fruit, an ancient form of our present-day orange.
