Profession: Foodhunter
Out for Asia’s Culinary Treasures
Mark Brownstein has an unusual profession. He travels through
remote areas of Asia to search for old, forgotten or unknown dishes, foods
or flavours in order to sell these to creative chefs around the world.
He is a foodhunter.

Mark is an American based in Hong Kong, where he moved in 1995 for love.
The agglomeration of steel and glass did not offer many jobs for the studied
landscape architect. So he made his passion his profession: cooking and
eating, studying food and experimenting with tastes and flavours. And
travelling. His job takes him from remote villages, food stalls and jungle
markets straight into the hippest restaurants in New York, Milan or Hong
Kong. His hunting grounds are mainly South East Asia and China. Currently
his favourite country is Laos.
We followed him the first time in 2005/2006 for a film project for SWR
and ARTE: Profession: Foodhunter
